Furikake! The Secret Ingredient in This Simple Chicken Sliders Recipe

If you love the salty taste of nori, the earthy, nutty goodness of sesame seeds, and the freshness of citrus, you will love this seasoning. The exact blend of ingredients in Japanese Furikake seasoning can vary widely. However, most contain some measure of white and black sesame seeds, sea weed, salt, and sugar.

It’s important to note that some varieties do contain Monosodium Glutamate, (MSG). This flavor enhancing ingredient is widely used in a variety of processed foods. MSG is generally thought to be safe, however, some people are sensitive to the ingredient. I find it gives me headaches, so I personally try to avoid it. For this reason, I prefer to use Furikake seasoning that is MSG free. If you’re sensitive to MSG, I recommend seeking out a good organic food source and reading the labels.

In this simple chicken sliders recipe, we use Furikake seasoning to lend umami flavor to our chicken cutlets.

To finish these tasty sliders, I added a few of these Easy 10-minute Ginger Sesame Pickles. They are crisp, mildly sweet and pair perfectly with the seasoned chicken and Yum Yum Sauce. In fact, they’re so good, you’ll want to put them on everything from sandwiches to pork bowls.

In this pickle recipe, English cucumbers and scallions are quick pickled in a light brine that is flavored with ginger, more of that delicious Furikake seasoning, and sesame oil. Their texture is slightly crisp and their flavor is bright and bold. If you’re really in a pinch for time, you can use a good, store-bought bread and butter pickle instead. A fresh pickle is best if going this route. However, if you have an extra 10 minutes, I encourage you to try this simple ginger sesame pickle recipe. They’re so easy!

They’re so easy, that I often prep a jar on the weekend so that we can snack on them over the course of the next week or two. I can’t tell you the number of times I’ve caught my husband eating them straight out of the jar as a quick snack, so the fact you can whip up a batch in just 10 minutes is a real bonus.

How to Prepare These Easy Yum Yum Furikake Chicken Sliders in 30 Minutes

Preparing these chicken sliders is easy, and the beauty of this recipe is that you can prepare as few or as many sliders as you need.

Prepped and ready to bake.

Start with boneless chicken breasts. If using regular chicken breasts, lay the breast between two sheets of plastic wrap and gently pound them down to 1/2 inch thickness. Divide the chicken into chicken cutlets that are approximately 3-inches in diameter. This is the perfect size for our sliders.

You can also buy thin-sliced chicken breasts at the grocery, divide them accordingly and save yourself the step of pounding. However, if you’re working through some stuff, the pounding of the chicken breasts can be quite cathartic. Just sayin’.

Once the chicken is pounded out, lightly spray the surface of the first side with cooking spray. This helps the seasoning and panko bread crumbs adhere to the chicken. Lightly season with a little salt, followed by an approximate measurement of 1/4 teaspoon of the Furikake seasoning and 1/4 teaspoon of Panko breadcrumbs. Once you’ve done one or two, you should be able to confidently eyeball it, but I found 1/4 tsp. of both Furikake and Panko on each side to be the right ration of seasoning to chicken.

Using the back of a spoon, gently press the seasoning into the surface of the chicken. Flip the chicken over and repeat the process on the other side.

If using an air fryer, bake the chicken at 390 degrees F for 10-12 minutes, flipping the chicken over mid-cycle. If using a conventional oven, bake the chicken at 350 degrees F for approximately 12 – 15 minutes, flipping the chicken over mid-cycle. Because the size and thickness of the chicken and how many pieces are being cooked at once can influence cook times, I recommend checking the chicken early and adding to the bake time if need.

Once the chicken is cooked through, you’re ready to begin assembling the sliders.

Follow the steps to assemble!

While the chicken is cooking, I like to use that time to prep the sliders. Have your pickles drained and your iceberg lettuce cut up into slider-size pieces and ready to assemble. I like having bamboo toothpicks off to the side of my assembly line as well. They are perfect for holding those little sammies in place!

Start by pulling out your slider buns and adding approximately one generous teaspoon of Yum Yum Sauce to the inside of both the top and bottom of the slider bun. As you make these, you’ll learn to eye-ball it.

Add the chicken to the base of the bun. Top the chicken with 2-3 pickles and a generous layer of lettuce. Place the top of the bun on the lettuce and anchor in place with a toothpick. It may seem like a lot of steps, but once you get that first one assembled, it goes very quickly.

Preparing these chicken sliders is easy, and the beauty of this recipe is that you can prepare as few or as many sliders as you need following the measurements below.

Ingredients

  • 3 large chicken breasts, pounded out to 1/2 inch thickness and each cut into three medallions measuring approximately 3-inches in diameter.

  • Non-stick cooking spray

  • 1/16 tsp. kosher salt per chicken medallion (a pinch per side)

  • 1/2 tsp. Furikake seasoning per chicken medallion (approximately 1/4 tsp. per side)

  • 1/2 tsp. Panko breadcrumbs per chicken medallion (approximately 1/4 tsp. per side)

  • 16 pickle chips divided (approximately 2 per slider depending on size)

  • Iceberg lettuce cut into pieces that are roughly 3-inches in diameter. You’ll need 2-3 pieces of lettuce per slider.

  • 2 tsp. Yum Yum Sauce per slider

  • 8 sweet Hawaiian-style slider buns (smaller than regular hamburger buns)
    8 toothpicks for holding the sliders together (optional)

Directions

  • Have your slider buns split in half and separated. Drain your pickles and have them set aside. Cut up your Iceberg lettuce and have it set aside. Have your Yum Yum Sauce ready to go.
  • If using a conventional oven, preheat the oven to 350 degrees F. Prepare a baking pan by lightly spraying it with cooking spray. Set aside.
  • Pound out the chicken breasts to 1/2-inch thickness and cut into portions that are approximately 3-inches in diameter. Depending on the size of the chicken breasts, you can get 2-3 pieces per pounded breast.
  • Lightly spray the chicken medallions with cooking spray on one side. Sprinkle with a pinch of salt and 1/4 tsp. each of Furikake and Panko crumbs. Gently press the seasoning into the chicken so it adheres. Flip the chicken over and repeat on the other side.
  • Baking the chicken
  • If using an air fryer, bake the chicken at 390 degrees F for 10-12 minutes. Turn the chicken over mid-way through the bake cycle. Once the chicken is finished cooking, remove it from the air fryer and allow it to cool slightly before assembling the sliders.
