This recipe for Easy 5-Minute Homemade Herb Rub is fast and oh, so delicious! If you’re hosting for the holidays you need this mix on hand. Even if you’re not, you’ll still want to add this rub to your spice rack.
Although I love the mashed potatoes, gravy and other sides that come with the holidays, this herb rub can easily transition to other seasons as well. It’s versatile. Simply cook up a couple chicken breasts or pork cutlets, sprinkle a little seasoning on top and you’re good to go.
One of my favorite sides to serve with herb rubbed chicken is Butternut Squash & Farro Salad. The salad is simply dressed with lemon juice and olive oil and pairs beautifully. If you’re looking for a lighter side dish to serve at your next holiday dinner or for an everyday meal, give this one a try.

If you’ve been following the MOstly Bakes blog for a while, you know that I like recipes that can be used many different ways. This Easy 5-Minute Homemade Herb Rub does just that. It’s been my Thanksgiving turkey go-to recipe for years. One of the reasons I love it so much is because it unifies the holiday flavors throughout the turkey, dressing and gravy. It’s also one of the primary recipes integrated into my Thanksgiving Planning Guide, which you can either Pin or Download for free from the blog.
The rub seasons the turkey, but I will often use a tablespoon or two in the dressing as well. Just enough to bring in some of those familiar herb notes. But not so much that everything tastes the same. For example, the herbs that remain in the fond at the bottom of the pan after the bird’s finished roasting provide the perfect amount of seasoning for the gravy. I usually only have to add a little stock and some roux to thicken it. No additional seasoning is required. Honestly, gravy doesn’t get any easier or more delicious than this.
If you need a quick appetizer, this Easy 5-Minute Homemade Herb Rub is great to have on hand. I like to infuse it with a good quality olive oil and serve with a crusty Italian bread for dipping.
Or, if you’re looking for something different to add to your charcuterie board, this herb rub transforms chicken or a pork loin into a great appetizer. Roasted and sliced thin, it’s a delicious and lighter alternative to cured meats.
