I love a good slice of avocado wrapped in a tortilla with scrambled eggs or on sourdough toast, but there are also times I want something a little different and yet still familiar. That’s when I reach for this easy avocado dressing recipe. It’s one of my favorite ways to top a homemade power bowl.

Making friends with buttermilk
I was that kid who rummaged through the kitchen cupboards and tasted everything. I learned at a very young age that cocoa powder was not sweet. Coffee tasted better with lots of milk and sugar then, although I use neither as an adult. And yes, buttermilk was a surprise to me as well.
I remember sneaking a sip from the container like my older brothers when nobody else was looking (and by nobody, I really mean my mom). It was not at all what I expected. It was thick, acidic – completely unexpected. I never chugged it again. After that, I regarded buttermilk with a certain degree of skepticism.
However, today I have a greater appreciation for buttermilk. Like yogurt or sour cream, cultures are added to regular milk to help it sour and thicken. The result is a slightly acidic dairy product that is often used as a meat tenderizer, in marinades and batters. It is a common ingredient used in ranch and other creamy salad dressings. Like regular milk, buttermilk comes in low-fat, nonfat and whole milk varieties.
It’s also great for baking. The acid in the buttermilk interacts with other ingredients like baking soda to produce a lighter, more tender texture. For example, I use buttermilk as a raising agent in my recipe for Romanian Coffee Cake. The baking soda and buttermilk produce a very moist cake with a delicate crumb.
Finding the right balance

Super Simple 5-Minute Avocado Buttermilk Dressing

Ingredients
The flesh of 2 ripe avocados, pitted and removed from their skins
1/2 cup fresh cilantro, packed
1/2 cup fresh parsley, packed
1 cup buttermilk
1/4 cup sour cream
Juice of one lime (a scant 1/4 cup)
1 tsp. kosher salt
1/4 tsp. ground black pepper
1/8 tsp. onion powder
1/8 tsp. garlic powder
Directions
- In a food processor or blender, combine all ingredients. Blend on low for one minute. Scrape down the sides of the container to ensure ingredients are evenly incorporated. Blend on low for one minute more until mixture resembles a light, creamy dip.
- Store in an airtight container in the refrigerator for up to one week.
