After looking over a few of my recipes, you might be surprised to learn that I’m not a huge drinker. It’s true that I cook with a lot of different spirits. As an added benefit, both cucumber and mint aid in digestion, hydration and flushing out toxins from the body. This combination of ingredients make this easy mocktail a great beverage for sipping on any time you need to get your body back in balance.

As for the process, to make this recipe, fresh slices of cucumber and a few mint leaves are muddled together with honey. The sugars in the honey help the cucumber release it’s natural water more easily. You can garnish with a slice of cucumber or a sprig of mint as desired. Both are pretty options, but certainly not necessary.

If you have a mandoline slicer, slicing the cucumbers lengthwise into thin strips that you can wrap along the inside of the glass is made easier. It’s a very pretty garnish, but if you are confident in your knife skills, you can prepare the cucumber slices by hand as well. Refreshing and hydrating mocktail featuring cucumber, mint and honey.

Ingredients

  • 3-4 thin slices of English cucumber

  • 5-6 large mint leaves

  • 1 1/2 – 2 tsp. of mild honey (look for honey that is light in color or from a summer pull)

  • 1 tsp. fresh lime juice

  • 2 ounces clear, unflavored Pedialyte

  • 2 ounces sparkling water (I prefer San Pelegrino)

  • Cucumber slices and/or mint sprigs for garnish (optional)

Directions

  • Prepare a glass with ice and set aside.
  • In a separate tall glass, combine the cucumber slices, mint leaves and honey. Muddle together until the cucumbers release their juice.
  • Add 1 tsp. of fresh lime juice, 2 ounces of clear, unflavored Pedialyte and 2 ounces of sparkling water to the muddled mixture. Give it a quick stir to incorporate the ingredients.
  • Strain the mocktail mixture into your prepared glass. Garnish with cucumber and mint as desired. Serve well chilled and enjoy!
