I remember seeing the strange cones. They were nothing I had seen before in the states, or if I had, I didn’t understand what they were. Jaggery, an unrefined cane sugar used in Indian cuisine, has a rich caramel-like flavor that is similar to piloncillo. Keep in mind that the flavor may vary slightly depending on the substitute you choose, so it’s best to experiment with the amount and adjust to taste. However, check with your local Mexican market first. You’re sure to find the ingredients you seek there, plus a few more new favorites. Trust me, the really good stuff is always there.

This recipe will yield approximately 1 1/4 cups of hibiscus piloncillo syrup.

Ingredients

  • 1/2 cup dried hibiscus flowers, packed

  • 1 1/2 cups cold tap water

  • 4 ounces piloncillo

  • Sparkling water and citrus slices to finish.

Directions

  • Make the hibiscus piloncillo syrup
  • In a small stock pot, combine the tap water, hibiscus flowers and piloncillo. Bring the mixture to the boil, stirring occasionally.
  • Reduce heat and simmer for 10 minutes.
  • Remove the pan from the heat and allow the flowers to continue to steep in the liquid as the syrup cools to room temperature.
  • Strain the syrup and store in an airtight container in the refrigerator for up to 2 weeks.
  • Make the agua fresca
  • Fill a glass with ice and citrus slices as desired.
  • For a single serving, combine 2 ounces of hibiscus piloncillo syrup with 4 ounces of sparkling water and enjoy.
  • To make a pitcher of agua fresca, combine 1 1/4 cups of syrup with 2 1/2 cups of sparkling water.
