I don’t know exactly why, but bagels with cream cheese and smoked salmon is one of those combinations I crave – especially in the spring. That spring craving got the better of me this past weekend when I was looking for something different to nosh on between March Madness college basketball games. Although football is my first love – and when I say football, I really mean Detroit Lions, Michigan and Michigan State University football – I appreciate a good college basketball game as much as the next person.

I wanted something fast with big, bold flavors. With just cream cheese, scallions, sour cream and a touch of salt, this simple yet flavorful dip is the perfect addition to any party platter or snack table. Lox and bagels soon came to mind and I began whipping up a small batch of this easy scallion cream cheese.

Irresistible 3-Ingredient Scallion Cream Cheese

Cream cheese, scallions, sour cream and a touch of salt make up this simple yet flavorful dip.

Ingredients

  • 4 ounces regular cream cheese

  • 2 Tbsp. sour cream

  • 2 Tbsp. scallions, cleaned and sliced, including the green tops

  • Salt to taste

Directions

  • Place the cream cheese in a bowl and allow it to rest a room temperature for approximately 5 minutes to soften.
  • Clean, trim and slice the scallions. Measure out 2 Tbsp. – including both the white and green of the scallion.
  • Add the scallions and sour cream to the cream cheese. Use the back of a fork to work the sour cream and scallions into the cream cheese. Blend until smooth and creamy.
  • Season with salt to taste.
  • Store in an airtight container in the refrigerator for up to one week.
  • Serving suggestion: top miniature pretzel bites or roasted potato halves with a dollop of scallion cream cheese, smoked salmon, capers, hard boiled egg and fresh dill.
