This Bellini recipe only contains three ingredients. And it’s easy to achieve that layered sunset effect if you know the trick. Like life, some things require a little finesse. You can’t always go crashing in and expect a pretty result. Sometimes, you need to take a more gentle approach and let things float. And when building this Bellini drink, you need to float your ingredients.

To achieve this beautiful layered effect, you need to “float” or pour each ingredient over the back of a spoon. This disperses the force of the second liquid as it’s being poured over the top of the liquid beneath it. But this gentle pouring technique is just one piece of the puzzle. The order you layer the ingredients is important as well.

Because the cherry syrup is the thickest and heaviest of the three ingredients in this Bellini recipe, it goes in the glass first. Next, the peach nectar is gently floated on top of the cherry syrup. Chocolate Cherry Challah makes great French Toast

I call for a little of my Cherry Simple Syrup at the bottom of the glass to achieve the sunrise effect in this Simple 3 Ingredient Tart Cherry Peach Bellini recipe, but don’t worry about what to do with the leftover simple syrup. You have so many delicious of options.

For example, it’s great on top of French toast, pancakes and waffles. In fact, I like to whip up a batch whenever I make a loaf of chocolate cherry Challah. I often make French toast out of a few slices and using this cherry simple syrup as a topping for the French toast is simply divine. It’s also the base for my Smitten Mitten Cocktail recipe.

The syrup can be stored in an airtight bottle in the refrigerator for up to 2 weeks.

Simple 3 Ingredient Tart Cherry Peach Bellini

The addition of cherry is a delicious variation on a classic Italian Bellini.

Ingredients

  • Per glass – you’ll want to make sure your glass can accommodate 3 1/2 oz. – 4 oz. of liquid.
  • 1 tsp. Cherry Simple Syrup, well chilled. See recipe here.

  • 1 oz. Peach Nectar, well chilled

  • 2 oz. Prosecco, well chilled

  • Helpful gadgets
  • A spoon

  • A bamboo skewer, chop stick or some other thin gadget to stir the cocktail

Directions

  • Carefully place 1 tsp. of cherry syrup in the bottom of each flute.
  • Over the back of a spoon, pour 1 oz. of peach nectar on top of the cherry syrup.
  • Over the back of a spoon, pour the Prosecco on top of the peach nectar. The goal is to pour three distinct layers of color.
  • Insert the skewer down the center of the cocktail and gently stir in a circle a few turns until the layers of the cocktail have slightly blurred and the bubbles from the Prosecco have activated. You still want a slight distinction between layers. Serve immediately.

Notes

  • For a small gathering, this cocktail can be prepped ahead of time by adding the cherry simple syrup and peach nectar to the bottom of the glasses. Store chilled in the refrigerator. Once your guests arrive, top with Prosecco and serve.
  • Yield: One 750 mL. bottle of Prosecco will produce 6 cocktails.
